Chef Johnson studied at the California Culinary Academy in San Francisco while training under acclaimed chef Denis Soriano at the Grand Café. He returned to his native Colorado and furthered his local depth of culinary experience by spending nearly eight years at the Flagstaff House restaurant, finishing as the Chef de Cuisine.
Chef Johnson felt that Via Toscana would be the perfect setting for his talents and commitment to his craft - a place where he could help create a neighborhood treasure with impeccable offerings worthy of the most discerning palates. He seeks to match the rich culinary traditions of Italy and Tuscany not just in content, but in making food both a celebration and centerpiece of life, using the best local ingredients and finding their best expression for each season, day, and dish.
Chef Johnson finds inspiration and beauty in the Rocky Mountains as an avid climber and back country skier. He cherishes time with his wife, Susie, and four year old son, Tesfaye.
